1 tsp. cinnamon<br />
1 c chopped nuts<br />
3 c chopped peeled apples<br />
1 tsp. salt<br />
1 c. coconut<br />
2 c. flour<br />
1 tsp. baking soda<br />
1 tsp. vanilla</p>
<p>1. Beat eggs and oil until well blended. Add vanilla.<br />
2. Add dry ingredients, mix<br />
3. Add nuts, apples, and coconut.<br />
4. Bake in a greased 9 x 13 pan at 350 degrees for 45 min.</p>

<p>1 c. ground raw potatoes or sweet potatoes<br />
1 c. ground raw carrots<br />
1 c. sugar<br />
1 c. flour<br />
1 c. raisins<br />
1 t. soda<br />
1 t. baking powder<br />
1 t. lemon extract<br />
½ t. cinnamon<br />
¼ t. cloves (I omit)<br />
¼ t. nutmeg (I double)<br />
3 T. melted butter<br />
½ t. salt</p>
<p>Steam in bottles and cans for about 3 hours. (In my pressure cooker, it took 2 cycles of 40 minutes each on the cake setting which doesn’t use pressure) Serve with cream sauce or lemon sauce. For cream sauce add lemon extract and powdered sugar to cream. Gail makes a sauce with sugar, cornstarch, lemon extract, and milk, instead of cream.</p>
